Discover the delicious secrets of plant-based cooking, starting with yuba-based Pistachio Baklava
Our co-hosts, Chinese food specialist and blogger, George Stiffman, and Secret Gardens chef Vanessa Lauren, will tell us of their amazing backgrounds that brought them together to collaborate on their upcoming cookbook, Broken Cuisine. Think plant-based recipes and sustainable cooking methods that are as authentic as they are good—not mere vegan substitutes.
George, who previously worked in a traditional tofu shop in rural China, has partnered with Vanessa, a Los Angeles based chef known for her pop-up dinners (and working with Chef Luda Lefebvre) to share their vast knowledge of tofu. Learn about its many varieties you may not be familiar with, like the yuba Vanessa will use to demonstrate this recipe from the book in the works, and how to incorporate them all into Western cooking styles. George, as the maestro of tofu, assures us that Vanessa can cook tofu for tofu haters—because she once was one!
